Naan bread

Ingredients:
2 1/2 c lukewarm water
sprinkle of white sugar
2 tsp yeast
5 1/2 c four
1 T salt
olive oil (for brushing)
1/4 c cornmeal

10 cloves minced garlic (opt)
3/4 c diced green onion (opt)

Fill a large bowl with the water. Add the yeast and a sprinkle of white sugar. Whisk the yeast until it's dissolved. Add 3 cups of the flour and stir until smooth. Add salt and the remaining flour. Stir again until well combined.
Dust a counter with flour. Knead the dough, adding more flour if too sticky. Form a ball, place in a greased bowl and spray the top with cooking spray. Cover and let rise in a warm area for 2-3 hours OR until doubled in size.

*****If your kitchen is too cold or you need it faster, preheat your oven to 200'. Boil 2 cups of water. Pour in a shallow cooking dish and place in the bottom rack of your oven. Turn OFF your oven and put your dough inside. Dough should rise within an hour.

Once the dough is ready, preheat your oven to 550'. Place baking tray in the oven as it heats up. Take it out and dust it with a little cornmeal. 

Transfer dough to floured surface. Punch out air. Cut into 4 pieces. Using your fingers, spread into oval shapes, about 8" long. Place on sheet and brush with oil (and garlic and onion if desired).
 Bake for 8-10 minutes.
