Ingredients:
1 c white granulated sugar
1/2 c shortening
2 c flour
1/2 tsp salt
2 eggs
3 pureed RIPE bananas (lots of brown!)
3 T hot water+1 tsp baking soda(mixed in)
1 1/2 c semi-sweet chocolate chips OR 3/4 c semi-sweet, 3/4 c white chips
cinnamon sugar
Cream eggs, shortening sugar and bananas together (works best in a blender). Add the flour. Stir in water mixture, salt & chips with a mixing spoon.
Preheat oven to 350'. Grease desired pan (muffin tin or loaf pan). Sprinkle cinnamon sugar into load slots. Pour batter into slots until 3/4 full. Sprinkle cinnamon sugar on top as well. Bake 20-25 minutes until golden brown on top and clean when a tootpick is inserted.
FREEZES WELL for 3 months!
