Ingredients:
½ onion, diced
1 clove minced garlic
½ carrot,
shredded (or half a bag of carrots matchsticks)
1 T olive oil
2 c diced cooked chicken breast
4 c chicken broth
1/4 t salt
black pepper to
taste
1 t thyme
16 oz potato gnocchi
1 1/2 c whipping cream
1 c fresh spinach OR 2/3 c frozen
Directions:
Make a rue of 1/3 c butter and 1/3 c flour. Set aside in separate bowl.
Sauté onion, garlic and carrot in olive oil over med heat until the onion is translucent.
Add chicken
breast, chicken stock, salt, pepper and thyme. Bring to a boil, then add
gnocchi.
Whisk in rue to thicken. Gently boil for 4 minutes then reduce heat to a simmer for 10 minutes.
Add whipping cream and spinach then cook for additional 1-2 minutes until the spinach is wilted.
