Ingredients:
1 T olive oil
1/2 lb browned ground sausage OR 1/2 lb smoked sausage, sliced
1/2 lb browned ground sausage OR 1/2 lb smoked sausage, sliced
1/4 c sun-dried tomatoes, diced TINY!
4 garlic cloves
1 1/2 c half and half (OR 1 1/2 c whipping cream+ 1/4 c of milk)
1 c mozerella cheese, shredded
8 oz cooked penne pasta
1/4 t red pepper flakes
salt to taste
Directions:
Add oil, garlic and sun-dried tomatoes in a medium frying pan. Cook for a few minutes, constantly stirring.

Add half and half (or cream). Bring to a boil. Add cheese, reducing heat to medium, and stirring until the cheese is melted. Turn heat down to simmer.
Add DRAINED, cooked pasta and sausage. Stir. Add pepper flakes and salt.
***If the dish is VERY cheesy and thick, add the 1/4 c milk (or more if needed). This is a sauce! It's meant to look saucy, not a paste. Think of the consistency of nacho cheese.
Garnish with fresh parsley if desired.
