Cornbread

Ingredients:
1 1/2 c flour
1 1/2 c cornmeal
4 tsp baking powder
2/3 c white granulated sugar
1 1/2 tsp salt
1/2 c + 2 T shortening
1 1/2 c milk
1/2 tsp vanilla
2 eggs
1/4 c brown sugar

Directions:
Preheat oven to 375'. Sift dry ingredients (flour, cornmeal, baking powder, sugar, salt). Cut shortening into dry ingredients until mixture is crumbly, Add milk and vanilla and stir ONLY until combined. Do NOT overwork it! 
Next, add egg and stir until combined. Pour into a greased 12 in skillet/pan. Bake in oven for 10 minutes. 
Remove from oven and sprinkle on brown sugar. Back an additional 10-15 minutes until toothpick inserted in the center comes out clean.
