Ingredients:
1 box Rice R’ Roni, BEEF

1 can corn

½ lb ground beef, browned

Directions:
Prepare rice as described on box. Add beef and corn. Heat all the way through.

Chicken Pot Pie

Ingredients: 1/2 -1 c frozen peas 1 can carrots 1 can diced potatoes 1 t dried onion 1 c shredded chicken/cubed chicken OR 1 can chicken 3 c water 4 boullion cubes 3 T cornstach+ 1 T water Directions: Combine all veggies, chicken, water and boullion in a medium pot. Cook until boiling. Add cornstarch mixture. Whisk it in so it doesn’t clump. Remove from heat. Grease round pie pan. Place bottom pie crust in the pan and press into sides to make the form. stretch the top edges over the edges of the pan. Pour filling mixture into pie crust. Top with 2 nd pie crust, pinching edges together to close. Bake at 350’ until golden brown on top, 20-30 minutes. Serves: Calories:

Banana Bread

Ingredients: 1 c white granulated sugar 1/2 c shortening 2 c flour 1/2 tsp salt 2 eggs 3 pureed RIPE bananas (lots of brown!) 3 T hot water+1 tsp baking soda(mixed in) 1 1/2 c semi-sweet chocolate chips OR 3/4 c semi-sweet, 3/4 c white chips cinnamon sugar Cream eggs, shortening sugar and bananas together (works best in a blender). Add the flour. Stir in water mixture, salt & chips with a mixing spoon. Preheat oven to 350'. Grease desired pan (muffin tin or loaf pan). Sprinkle cinnamon sugar into load slots. Pour batter into slots until 3/4 full. Sprinkle cinnamon sugar on top as well. Bake 20-25 minutes until golden brown on top and clean when a tootpick is inserted. FREEZES WELL for 3 months!

Creamy Sausage Pasta

Ingredients: 1 T olive oil 1/2 lb browned ground sausage OR 1/2 lb smoked sausage, sliced 1/4 c sun-dried tomatoes, diced TINY! 4 garlic cloves 1 1/2 c half and half (OR 1 1/2 c whipping cream+ 1/4 c of milk) 1 c mozerella cheese, shredded 8 oz cooked penne pasta 1/4 t red pepper flakes salt to taste Directions: Add oil, garlic and sun-dried tomatoes in a medium frying pan. Cook for a few minutes, constantly stirring. Add half and half (or cream). Bring to a boil. Add cheese, reducing heat to medium, and stirring until the cheese is melted. Turn heat down to simmer. Add DRAINED, cooked pasta and sausage. Stir. Add pepper flakes and salt. ***If the dish is VERY cheesy and thick, add the 1/4 c milk (or more if needed). This is a sauce! It's meant to look saucy, not a paste. Think of the consistency of nacho cheese. Garnish with fresh parsley if desired.
