Baked Potato Soup

Ingredients:
1/3 c flour
1/3 c butter
1/2 t salt
1/2 t pepper
3 1/2 c milk
1 c shredded cheddar
2 baked potatoes (peeled and diced) OR 2 cans diced potatoes
8 slices cooked bacon, broken up
1/2 c sour cream
3 green onion, diced
1/2 t dried parsley

Directions:
Melt butter in pot. Add flour, salt and pepper. Add milk 1 c at a time until heated through but not boiling, whisking in the rue mix. When all milk is added, bring to a boil. Boil for 5 minutes stirring constantly. Add potatoes,onions and parsley. Reduce heat and simmer 10 minutes. Add remaining ingredients and stir. Serve when cheese is melted.
