
Ingredients:
2 T olive oil

spicy sausage, sliced
2 c shredded chicken
1/2 medium onion, diced

large bell pepper, diced

Creole seasoning

cayenne pepper

cloves garlic, minced

heaping T tomato paste

can diced tomatoes
2 c
chicken stock
½ lb
medium shrimp
1 T fresh diced parsely ( or 2 t of dried)
1 T
cilantro, chopped
Directions:
Heat 1T olive oil in large pot over med heat. Add sausage allowing it to brown edges. Set aside in bowl.
Heat 1T olive oil in large pot over med heat. Add sausage allowing it to brown edges. Set aside in bowl.
Cook onion, garlic and pepper in 1 T Olive oil until onion is translucent. Add Creole, cayenne pepper, tomato paste, tomatoes, chicken stock, sausage and chicken. Stir and simmer for 20 minutes.
Add shrimp and simmer 2 more minutes.
Stir
in parsley and cilantro. May serve over rice.
