Gumbo

Ingredients:
2 T olive oil
1 lb spicy sausage, sliced
2 c shredded chicken
1/2 medium onion, diced
1 large bell pepper, diced
½ t Creole seasoning
¼ t cayenne pepper
3 cloves garlic, minced
1 heaping T tomato paste
1 can diced tomatoes
2 c chicken stock
½ lb medium shrimp
1 T fresh diced parsely ( or 2 t of dried)
1 T cilantro, chopped

Directions:
Heat 1T olive oil in large pot over med heat. Add sausage allowing it to brown edges. Set aside in bowl. 
Cook onion, garlic and pepper in 1 T Olive oil until onion is translucent. Add Creole, cayenne pepper, tomato paste, tomatoes, chicken stock, sausage and chicken. Stir and simmer for 20 minutes. Add shrimp and simmer 2 more minutes.
Stir in parsley and cilantro. May serve over rice.
