
Ingredients:
4 salmon filets
4 T flour
2 T olive oil
salt and pepper
to taste
4 T honey
lime zest
Sauce
ingredients:
6 T butter
1 T honey
2 cloves minced
garlic
juice of 1 lime
Directions:
Preheat oven to
400’. Melt butter in medium saucepan over med heat. Cook, whisking constantly,
until the foam subsides and the butter begins to turn golden brown. Stir in
garlic, honey and lime zest. Season with salt and pepper. Set aside.
Season salmon with
salt and pepper. Dredge each salmon with 1 T flour and drizzle with 1 T honey.
Heat olive oil in skillet on med/high heat. Add salmon to skillet and sear both
sides until golden brown, about 1-2 minutes per side. Place on a cookie sheet
and bake completely through, 8-10 minutes. Cover with sauce and bake additional
2 minutes.
