
Ingredients:
3 T olive oil
2 lbs ground beef,
browned
1 small onion,
finely diced
2 c chopped
celery
5-6 carrots,
sliced
1 carton chicken
broth
2 c water
4 c tomato sauce
½ c red wine
1 c kidney beans
1 can green beans
2 c baby spinach
Oregano, Basil,
salt and pepper to taste
1 package seashell
pasta
Directions:
Saute onion in oil. Add garlic celery, and carrots continuing to saute. Add broth, water, and tomato sauce. Bring to a boil. Add red wine. Reduce heat and add both beans. Season with oregano, basil, salt and pepper to taste. Simmer 30 minutes.

In a separate
pot, prepare pasta as directed on package. Drain and add to minestrone. Just
before serving add spinach. Cook 2 minutes and serve.
