Ingredients:
3 lbs russet potatoes
1 T Apple cider
vinegar
1 T sugar
1 T Mustard
2 c mayonnaise
½ t onion powder
(opt)
½ chopped onion
(opt)
4-5 boiled eggs
(cooled and diced)
Directions:
Boil potatoes until they’re
ALMOST SOFT. Drain, peel and allow to cool for 1 hour.
Put vinegar in a medium
size bowl. Add sugar in the bowl and stir till dissolved; add mustard and stir.
Add mayo and onion powder.
* If it is to mustardy to
you, keep adding mayo until it tastes the way YOU like it.
Add hardboiled eggs, cover
and refrigerate.
Best if made a day ahead
of day you want to serve them
