Lamb Shanks & Orzo
Ingredients:
2 lamb rib racks
1 c diced tomato
1 c beef broth
1/4 t minced garlic
1/4 onion powder
1/2 t rosemary
2 c cooked orzo pasta
Directions:
Place the lamb, tomato, garlic and broth into a crock pot. Cook on low for 4 hours.
Take lamb out, place over orzo in a serving dish. Pour crock broth into separate bowl. Add seasonings and thicken with cornstarch (3 T cornstarch+ 1 T water). Pour over lamb dish & serve.
