Ingredients:
2 T oil
2 T oil
1/4 medium onion, chopped
1 1/2 c rice
3 t minced garlic
2 1/2 c chicken broth
1 c plain tomato sauce
4 T chopped fresh parsley or 2 T dried (opt)
Directions:
Saute onion in oil.
Saute onion in oil.
Add rice and toast for 3 minutes, stirring consistently. Add garlic, cook additional minute.
Add the rest of the ingredients and bring to a boil. Cover and reduce heat to a simmer.
Simmer for 25 minutes or until the rice is soft and liquid is gone.
