Ingredients:
6 oz orzo pasta
1 ½ c grape/cherry tomatoes, sliced
in half
¼ c kalamata olives, sliced
½ c feta cheese, crumbled
¼ c fresh parsely, chopped
2 T drained capers
Lemon dressing:
¼ c lemon juice
Salt and Pepper to taste
1 t honey
1 clove minced garlic
½ c olive oil
Directions:
Cook pasta, drain and set aside.
Dressing; combine all ingredients (EXCEPT
olive oil, salt and pepper) in a blender. Turn on and slowly add olive oil.
Taste and add the salt and pepper to taste.
Combine pasta with remaining
ingredients and drizzle with enough dressing to coat. Toss then serve or
refrigerate until ready to serve.
