2 lb cube hashbrowns

1/2 red pepper, diced

1/2 yellow pepper, diced

1/2 green pepper, diced

1/2 onion, diced

8 eggs

1 package cooked bacon, crumbled OR 1/2-1 lb of browned ground sausage

1/2-1 c shredded cheese

1 T oil


Directions: 

Saute onions and peppers in oil until mostly soft. 5-10 minutes. Set aside. 

Cool hashbrowns with a bit of butter until cooked, golden on edges. 

Combine the rest of the ingredients (except eggs) with the hashbrowns in a large frying pan. 

Cook eggs over-easy and serve over hash.
